Chiacchiere
This is a traditional food of Mardi Gras. This recipe will make a small quantity of chiacchiere.
Mix 3 whole eggs, 50 grams (less than 2 oz.) of butter, 300 grams ( about 11 oz.) of flour, grated orange peel, 3 tablespoons of Sambuca or Strega*, and a pinch of salt. Knead into a soft dough. Let the dough sit for half hour; then roll it thin. Cut the dough into strips and twist into 3” long pieces. Deep fry and drain on paper towels. When still hot, cover with confectioner’s sugar.
*Usually a licorice flavor is used, but a lemon liqueur can also be used. Additionally, tangerine or lemon peel may be used instead of orange peel.
