A Few Campagna Cheeses

Campagna is the region surrounding Naples. This is just a smattering of the type of cheeses which are made locally. The most famous by far is the oh so delicious Mozzarella di Bufala di Campagna

Burrino –c- pear-shaped mild cheese with a “heart” of butter
Bocconcini di mozzarella – b – small mozzarella balls
Caciocavallo podolico – c – similar to provolone but more compact; usually tied to another
one with string and suspended on a stick
Caciocavallo silano – c – oval-shaped cheese
Caprino – fresh goat cheese
Fiordilatte – fresh cow’s milk cheese; looks like mozzarella
Mozzarella di bufala di campagna – fresh buffalo milk cheese
Provola affumicata – c or b- fresh, smoked fiordilatte or mozzarella
Ricotta romana di bufala – a creamy, delicate cheese
Ricotta di fuscello – c or b - even creamier than ricotta romana di bufala
Ricotta salata – c – salted ricotta
Scamorza – c or c/s – soft cheese; may be smoked or not
